I have my solar chips in series in each panel, but should I connect the panels in Parallel or also in series...?

I have 10 panels, each producing around 18 volts, and intend to Connect them to 10 12v deep cell batteries.

Any help out there...?

You certainly do not want to hook them up in series; that would add up the voltages from each panel so you would have for example 180 volts with ten panels! I would caution you against just hooking them directly across the batteries with no regulator or steering diodes in between, but you should get an answer from someone with more experience. I'm concerned  as to what might happen when there is no output from the panels as during the night, when the batteries might put current into the panels.   Good Luck!   Jackson   MSEE

Parallel.

If they are in series you add the voltage. If they are in parallel you add the amps. In series you effectively have one 180 volt panel and one 120 volt battery. You probably don't want that. And as mentioned above, you should have a charge controller to ensure that you don't over charge the batteries.
