i have gigabyte ddr2 p31 es3g supports intel core 2 quad and intel core2 dou
i have intel core 2 dou 3.00 ghz

I don't really understand what you are asking, but core 2 quad (four cores) is always better than core 2 duo (two cores).

you should buy an 2nd Generation Intel Core i3 Processor 3.10 ghz with 3mb cache for example............for example i3-2100.

Since that's a budget board that supports core 2 Quad (socket 775) I would go with that...like this..IF...its on the "support" list....http://www.newegg.com/Product/Product.aspx?Item=N82E16819115130

I would get a Core Quad 2.5GHz since they are much cheaper:
